HL Banana Bread

This is a perfect winter warmer, the combination of sweet and savoury spices makes for a perfect morning or afternoon pick-me-up! Guilt free, glutenfree, refined sugarfree etc

Caution, very difficult to stop at one slice :)

Ingredients

4 extra ripe bananas (the riper the better!) + 1 extra banana for topping

1/4 cup of organic grass fed butter (melted)

3 organic eggs

1/4 cup organic sultanas or raisins

1 tsp vanilla powder

1.5 tsp ceylon cinnamon (this one is my favourite)

1/2 cup coconut flour

1.5 tsp baking powder

1/4 tsp salt

optional extras: some hemp seeds, nutmeg, collagen powder for extra protein, walnuts

Directions

Preheat oven to 180 degrees.

In a mixing bowl combine all the ingredients and mix through with electric beater until the mixture resembles cake batter, if looking a little runny can add some more coconut flour. Line a bread tin with parchment paper and add the mixture, add the sliced banana to the top and drizzle some honey on-top, put in the oven and bake for about 45 mins, the centre should be set and the top nice and golden.
