RECIPE | Spiced Chicken Hearts
Organ meats were traditionally considered sacred foods, given to pregnant women, children & the injured, have since made their way out of the modern diet and replaced with primarily the flesh cuts of meats. It seems a shame if one chooses to consume meat to only be selective with the cuts of meat and discard other parts, so I believe we should be honouring the whole animal for its sacrifice, nose-to-tail no waste, ethically sourced organic animals. Hearts are high in protein & fat with no carbohydrates. Very high in iron, vitamin B12 & zinc, high in pantothenic acid, phosphorus & riboflavin. Also very high in cholesterol which conventional nutrition will suggest is a negative, I would suggest do more research and make your own mind and informed decision on that topic.
Here is a very simple recipe for Chicken Hearts
Ingredients
approx. 500g organic chicken hearts - I get mine from Southampton Homestead & Farm available from Dirty Clean Foods
2-4 tsp allspice
1 tsp cracked black pepper
1 TBS Tamari
1 TBS Apple Cider Vinegar
1 TBS Honey
Instructions
Marinade the hearts in the above ingredients ideally overnight in the refrigerator.
Add the mixture to a hot pan and cover with a lid to trap the steam, turn down to medium and cook for 5-10 mins making sure to regularly flip the hearts around to cook evenly.
Garnish with some fresh chopped parsley & enjoy
