Guest Recipe | Raw Lemony-Lime Cherry Torte

All too often, we hear people complaining that a truly healthy diet does not allow for any fun treats, such as cakes and sweets etc. So, Ive been asked by the Holistic Lifestyler to debunk this myth by guest blogging a delicious recipe that is sure to satisfy your cravings. In fact, this raw gem will likely smash your taste buds and tingle those molars way in the back of your mouth! :)Thus, with pleasure, here we go!

Ingredients:

The Base:
1/2 cup Raw Almonds (soaked for 4 hours)
1/4 cup Pepitas (Pumpkin Seeds)
1/4 cup Sunflower Seeds
1/4 cup Cacao Powder
1/4 tsp Cinnamon Powder
1/2 tsp Sea Salt (Celtic or Himilayan)
8 Pitted Medjool Dates (softened in warm water)

The Filling:
2 cups Raw Cashews (soaked for 4 hours)
1 cup Lime Juice (freshly squeezed)
1 cup Lemon Juice (freshly squeezed)
Cononut Oil
1 tbsp Raw Honey
tbsp Lime Zest (grated)
8 Cherries (fresh, pitted, and chopped)

Instructions:
In a blender, mix the raw almonds, sunflower seeds, and pepitas until fine.
Add to a mixing bowl, then combine the cacao powder, cinnamon, sea salt, and dates.
Use your hands to mix and then add the contents to a 23 cm springform cake pan.
Distribute evenly, and place in a freezer for 30 minutes.
The base is now complete and during this time, we prepare the filling.
In a food processor, add the cashews, lemon and lime juice, coconut oil, raw honey, and lime zest.
Mix continuously until obtaining a smooth consistency.
Grab the base from the freezer, and pour this filling mix into the pan, while gradually adding the chopped cherries.
Ensure the mixture is distributed evenly and place in the freezer for 1 hour to set.
Garnish with fresh lime zest.
Enjoy! Who says you cant have your cake - and eat it too :)
