Spiced Cauliflower & Fig Salad

I recently visited The Market Eating House in Bunbury & one of the dishes we had was a spiced cauliflower dish, it was one of the best cauliflower recipes I'd eaten so decided to try replicate it somewhat. It's still quite different to the original which was served on some almond cream and didn't have figs but here is my take on it anyway :) Ps their Porkbelly was pretty amazing as well (actually the whole menu was great!)

Ingredients

1 medium head of cabbage
3 figs –diced into cubes
10 small red grapes- halved
Flat leaf parsley to garnish
¼ cup coconut oil
1 TBS or so of Indian spices (ground coriander, cumin, turmeric, mustard, black pepper, cayenne pepper)
Good quality sea salt - I like Celtic or Himalayan

Method

Break the cauliflower up into small florets and spread out in a baking dish
Add the coconut oil and mix through cauliflower
Add spice blend and mix through well
Add some salt good pinch or two
Add to 180 degree Celsius oven for approx. 30 mins
Transfer to serving dish and add the figs, grapes and parsley
Optional extras ; drizzle some olive oil to serve and add some toasted pine nuts
